Course Description: Fermentation Workshop: The Art of Fermented Foods

Learn about culinary fermentation in this extensive, hands-on workshop. Explore the role of fermentation in food, and culture, while creating an assortment of culinary treats, such as beer, cheese, kimchi, kombucha, vinegar, pickles, bread, and more! Each workshop will focus on a different culinary fermentation, to help you gain understanding of the core fermentation techniques and health benefits of fermented food. Due to the extended time needed to get a full fermentation on many recipes, this 8-week course will run over the course of several months. Cost includes all consumable materials, and equipment. Some additional materials will be required throughout the workshop. Those are listed in the "Additional Course Information" section of the online course listing or on your email. Schedule: Class sessions are Fall 2025: 10/12, 10/26, 11/9, and 11/23; Winter 2026: 1/11, 1/25, 2/8, and 2/22. No classes scheduled in December 2025.

Required materials to be provided by the student:
Class 3: One (1) new pint-sized canning jar
Class 5: Three (3) new quart-sized canning jars with new lids and rings
Class 6: Two (2) new quart-sized canning jars with new rings and lids; 4 pint-sized canning jars with new rings and seals
Class 7: Three (3) new pint-sized canning jars; One (1) new quart-sized canning jar.
Class 8: Twelve (12) 5 oz 'hot sauce' bottles

Cancellation Policy

Students must cancel by contacting our office via phone: (541) 383-7270 or email: ceinfo@cocc.edu. Cancellations received 5 days prior to the start of the class will receive a full refund. Full refunds are also issued for classes cancelled by COCC. Refunds will be issued back to your card or in the form of a check and mailed within two weeks of the cancellation date if paid by check or cash. Failure to participate in a course or program does not result in a refund. Exceptions to the general refund policy are noted in the course descriptions on our website and in the printed schedule.
