Course Title: (ECO113) OYSTERS ON THE HALF SHELL: REFLECTIONS OF COASTAL WATERS

Oysters grow in coastal rivers and bays and take on the flavors of the plankton they consume, and the available plankton can vary significantly along the coast. That is one reason raw bars showcase distinct varieties. This course will delve into the natural history of oysters and the growing industry of half-shell oysters. It will include tips for learning about raw oyster varietals, deepening appreciation for their variety, and the coastal waters where oysters grow. The lecture will also weave in nutrition information, food safety for shellfish consumers, and other interesting facts.
