Course Description: A Supper Series: Spring Pea Agnolotti

Welcome to the COCC Community Education Dinner Series. Watch Chef Candy Argondizza in a demonstration on making fresh agnolotti, a folded pasta from the Piedmont region of Italy, in our state-of-the-art demonstration classroom at Cascade Culinary Institute. Using seasonal ingredients, Chef Candy will fill the pasta with sweet spring peas and then simmer that pasta in a parmesan broth. The demonstration is followed by a sit-down dinner in the Elevations dining room, with the agnolotti, paired alongside a goat cheese crostini with bitter Italian greens, and prosciutto crisp.
