Course Description: A Supper Series: Spring Pea Agnolotti
Welcome to the COCC Community Education Dinner Series. Join Chef Candy Argondizza as she demonstrates the technique of making fresh agnolotti, a flattened pasta from the Piedmont region of Italy, in our state-of-the-art demonstration classroom at Cascade Culinary Institute. Using seasonal ingredients, the pasta is filled with sweet spring peas and simmered in a parmesan broth. Dinner will be paired alongside goat cheese crostini with bitter Italian greens and a prosciutto crisp. At the completion of class, students will enjoy the dish and a glass of wine together in the Elevations dining room.
