Biography: Sarah Witt is a structural engineer turned gluten-free baker. A graduate of the Baking and Pastry Arts program at Cascade Culinary Institute, Sarah focuses on making gluten-free treats taste great. She has worked at various bakeries in Bend and is an instructor at the Culinary Institute. She also has a home-based business making chocolate truffles and gluten-free cookie dough. Sarah loves experimenting with new recipes and sharing tips for a healthier lifestyle.

Get ready for a fun, hands-on baking experience where you will learn three essential baking techniques: Creaming method for cookies, flawless chocolate tempering, and perfect meringues. We will start by mastering the art of light and airy meringue for fun cookies and pavlova. Then we will walk through the classic creaming method for cookies and trouble shoot some common problems. Lastly, we will temper chocolate to decorate the cookies and meringue. All recipes are gluten free.

Just in time for Mother's Day! In this gluten-free baking class, you'll learn how to create delicious, melt-in-your-mouth cookies! You will be guided through the essentials of gluten-free baking, exploring a variety of alternative flours, and how to choose the right one for your cookies. You'll also dive into the role of starches, and how they affect texture and structure in gluten-free dough. Whether you're new to gluten-free baking or looking to refine your skills, this hands-on class will leave you with the confidence and knowledge to make mouthwatering cookies in your own kitchen. All recipes are gluten free. Parents can register their child, age 10-15, to cook at their station with them, at no charge! Space limited to one child per parent. Parents who wish to register with a child must call the Community Education office to register.
