Biography: Lori Miller grew up in rural Iowa and landed in beautiful Bend, Oregon, in 2015 after retiring from a 25-year professional career. Inpursuit of her passion for baking, Lori graduated from the Baking& Pastry Program at the Cascade Culinary Institute (CCI).Having the opportunity to attend this program in her "backyard"was literally a dream come true! Lori is a substitute Baking &Pastry Instructor for CCI, in addition to teaching CommunityEducation classes for baking enthusiasts of all ages. Lori alsoworks as a baker for Mill Fire Baking, specializing in artisanbread production and fresh-milled bakery items. She remainsengaged in her community by volunteering for a variety ofculinary events and enjoys working at local farmers' markets. |

Baking: Artisan Bread Baking with Sourdough Starter
In this two-day beginner's workshop, you'll learn to make artisan bread using a sourdough starter! You'll learn the basics of sourdough bread baking, how to keep your sourdough starter "alive" and why each of the 12 steps of bread baking is important in creating that desired loaf. You'll learn to mix, fold, ferment, shape, proof, score and bake beautiful and deliciously nutritious loaves of sourdough bread.

Baking: Artisan Baguettes for Beginners
In this one-day class, you'll learn to make artisan baguettes from scratch! You'll learn the 12 basic steps of bread baking and the differences between using commercial yeast and sourdough starters in our dough. You'll practice shaping baguettes, "scoring" them with 5 traditional slashes, using a couche for proofing the elongated loaves and load a deck oven with confidence. To top off the day, you'll take home freshly baked baguettes!
