Course Detail: Scrap to Table Recipes: Get More From Your Food
Do you find yourself feeling bad about the amount of food you or your family throws in the trash or compost? If so, this class is for you! Join Chef Shannon as she takes a light and humorous approach teaching you how to use the "bits" you typically throw away. Menu will include rice fritters, Italian dumplings, stocks, pesto, and candied fruit peels. Class will also explore dishes made with leftover pasta. Bring an open mind, apron, chef's knife and a hunger for adventure as you explore the new beginnings of the old scraps! Recommended book: Waste Not: How To Get The Most From Your Food by James Beard Foundation. This book is not available in the COCC Bookstore but can be purchased from a company of your choice.
