Pack your taste buds and join us on a flavorful journey across the globe, no passport required! Join Chef Candy Argondizza for this hands-on culinary series. Each class highlights a signature dish from a different country, offering a delicious introduction to its unique flavors, ingredients and traditions. By the end of the series, you'll have created and savored five dishes that showcase the rich diversity of global cuisine. Students can register for the full series or any of the five individual classes.

This course provides an overview of the dynamic ideologies, political policies, economics, geography, social structures, mass media presentations and arts and literature, since the formation of the People's Republic of China in 1949 to the present. The second course of a three-course sequence in intermediate Mandarin Chinese language and culture. This course will focus on effective communication in the Mandarin Chinese language, emphasizing both the written and spoken language, as well as an understanding of the practices and products of Chinese culture. Particular attention will be given to exploring the relationship between Chinese language, literature, philosophy and culture. Prerequisites: CHN 201. Conversational Spanish I is for the true beginner or novice, with little or no Spanish language instruction. Students will learn the Spanish alphabet, basic grammar construction and vocabulary to help provide a foundation for conversational skills in practical situations. By the end of the class, students will be able to introduce themselves, talk about their family and weekly activities using ser, tener, estar and other common verbs, as well as ask simple questions to discover information. A textbook is required for this course.

Conversational Spanish II will pick up where Conversational Spanish I left off. This course is for novice students with some Spanish language instruction. Students will spend time in class expanding grammar, conversational expressions and vocabulary, as well as working on listening and speaking skills through a variety of activities. This course is taught primarily in Spanish, with some English to support learners' comprehension. A textbook is required for this course.

Take your Spanish-speaking skills to a higher level in this intermediate language class. Build confidence in daily conversation and gain additional vocabulary and communication skills. This course will reinforce stem changing, irregular and reflexive verbs; practice Preterite, Imperfect and Present tenses; and introduce Past Perfect, Future, and Conditional tenses.


February 3, 2026 to March 5, 2026 | 5:30pm-7:30pm PST | Online
This blended level course is for students with no previous, or just a brief previous, introduction of Spanish. It is intensive language instruction with an emphasis on developing basic communication skills in Spanish. This course will introduce students to the most frequently-used verbs in Spanish so that students can immediately understand and share important needs and information. Students will learn greetings, expressions of courtesy and other useful beginning vocabulary through introductions, stories and songs. Group A will be taught using 70%-90% comprehensible Spanish at this level.


June 22-25, 2026 | 8:30am-4:30pm PDT | Redmond
This blended level course is for students who have been introduced to, and have a working knowledge of the present tense. This course will provide a thorough and extensive review of the present tense only, practice of -AR, -ER & -IR verbs, introduction of stem-changing verbs, Ser & Estar, "Tener + que + infinitive " and "Ir + a + infinitive." It will introduce reflexive verbs and pronouns, and introduction of the imperfect tense. There will be an emphasis on vocabulary development, communication strategies and oral proficiency. Group B will be taught using 70%-90% comprehensible Spanish at this level.

This blended level course is designed to continue building grammatical structures that focus on speaking, reading, writing and understanding. Topics include a review of the present tense and a comparison of the present and present progressive tenses. Students will review the preterite and imperfect tenses, compare and contrast the preterite and imperfect tenses and be introduced to additional uses in more complex sentences. New vocabulary and grammatical structures will be presented and developed in conversational and written contexts. It will introduce and expand the uses of the present subjunctive tense and formal commands. Vocabulary development and communication strategies will be emphasized. Recommended for those who have a command of the present tense and a working knowledge of the past and future tenses; or one to two years of study at the college level. Group C will be taught using 70%-90% comprehensible Spanish at this level.

This blended-level course is for students with a minimum of two to three years of college-level Spanish or the equivalent. Students should have a working knowledge and familiarity with most tenses. The course readings and discussions will be designed to facilitate the use of the preterite, imperfect and present/past perfect tenses with increased ease and accuracy. Similar attention will be given to the present and past subjunctive. The class will explore social media, short video clips, music and current events in addition to short stories, lyrics and poetry. Group D will be taught using 70%-90% comprehensible Spanish at this level.

This blended level course is for the most advanced students and will include concepts from levels advanced high and superior to create a robust and challenging course. Students must have a minimum of three years of college level Spanish or the equivalent in Spanish speaking experience. This course will review the contrasts between the preterit and imperfect tenses and the uses of the present subjunctive mood. Additional concepts will include an introduction to the imperfect subjunctive mood and its uses and the conditional tense and its uses. Grammatical structures and vocabulary will be highlighted through literary selections, business terminology and idiomatic expressions, proverbs, synonyms and antonyms. Other topics include: the pronoun "se," complex sentences and new literary vocabulary, recognition of the different accents of the Spanish-speaking world and how to improve one's own Spanish accent. Group E will be taught using 70%-90% comprehensible Spanish at this level.

This course surveys children's literature for all ages in genres that may include picture books, myths and folklore, poetry, nonfiction, historical fiction and fantasy, making connections to the historical, cultural, institutional and psychological contexts related to production and reception. Examines how texts represent childhood and reflect assumptions about the social and educational function of children's and young adult literature. This is a non-credit Community Education course, taken with credit students. You will not receive college credit.

Strengthen your Spanish speaking and comprehension skills through engaging literature and lively dialogue. This class is designed for advanced Spanish speakers who enjoy reading and thoughtful discussion. Each week, students will read a short story independently, then come together to explore its themes, language and context through guided conversation. The course will feature four short stories provided as PDFs by the instructor. Recommended for learners with Intermediate-High to Advanced Spanish proficiency.
