Course Description: A Supper Series: Spring Pea Agnolotti
Welcome to the COCC Community Education Dinner Series. Watch Chef Candy Argondizza in a demonstration on making fresh agnolotti, a folded pasta from the Piedmont region of Italy, in our state-of-the-art demonstration classroom at Cascade Culinary Institute. Using seasonal ingredients, Chef Candy will fill the pasta with sweet spring peas and then simmer that pasta in a parmesan broth. The demonstration is followed by a sit-down dinner in the Elevations dining room, with the agnolotti, paired alongside a goat cheese crostini with bitter Italian greens, and prosciutto crisp. Please Note: We recognize that many individuals have specific dietary restrictions, aversions, and/or requests. Due to the nature of our culinary classes, the menu is set and we are limited in our ability to make adjustments, and outside food cannot be brought in to meet special requirements.
