Food Allergies: The Comprehensive 10-hour Course

This comprehensive course provides an overview of food allergies in the foodservice setting, including the differences between food allergies and food intolerances, common symptoms of allergic reactions, and the nine major food allergens in the United States.

By the end of the course, students will be able to state the differences between food allergy and food intolerance; list 5 symptoms of an allergic reaction; identify the 9 common food allergies in the United States; discuss food labeling and choosing the right products for your foodservice operation to ensure safety; discuss food labeling and choosing the right products; identify food preparation challenges, in order to reduce the risk of cross-contact in the foodservice setting; list the 5 key competency areas for the CDM, CFPP; define and discuss the Scope of Practice for the CDM, CFPP and the Code of Ethics for the CDM, CFPP; and discuss how the Code of Ethics and Scope of Practice related to food allergy protection.

  • Students will have access to this online course for up to six (6) months.
  • Upon completion of the course, you will be able to print documentation of completion for 10 hours of CE (9 Sanitation + 1 Ethics).
