Course Detail: GCCU-1016 - CE Brunch Dates

What to Expect: Here at Galveston College Continuing Ed you'll work together with other students in a fun, hands-on environment led by our professional Chef Faye Powell, a GC Instructor. Featuring Texas Tail Distillery Cocktails

We will whip up some classic brunch menu items and throw in a few twists.

Menu items may include:
  • Seasonale Fruit Smoothies
  • Quick Muffaletta Puffs, Ham and Gruyere Puffs, or Pizza Puffs
  • Salmon Gravlax with homemade herbed cream cheese, lemon dill cucumber fennel slaw
  • Gulf shrimp cakes, poached eggs, classic Hollandaise or Bernaise sauce
  • Creamy French scrambled eggs with herbs
  • Jalapeno cheddar biscuits, sausage or bacon ball muffins, cream gravy, baked bacon
  • Challah French toast with blueberry compote, Croque Madame or Croque Monsieur
  • Strawberry scones with homemade clotted cream, homemade butter
  • Raspberry chocolate brownies a la mode

You will work with your partner at workstations with your equipment. Classes are 2 to 2 1/2 hours unless otherwise noted. Hands-on classes are limited to 10-12 students. You will be standing, cooking, and working for most of the class.

Please wear comfortable, closed-toe shoes and have long hair tied back.
