Biography: Alyssa Dalgleish has over 12 years of experience in the restaurant industry, working in fine dining, wineries, cafés, scratch kitchens and nightlife in both front- and back-of-house roles. For the past five years, she has taught advanced culinary courses at Bend Senior High School, guiding students in grades 9-12. Alyssa is passionate about sharing her industry knowledge and inspiring learners of all ages to build skills, confidence and creativity in the kitchen.

Sunshine and Sweet Treats: A Summer Traditions Baking Youth Camp
This baking camp celebrates the flavors of summer. Students will create sunny, seasonal treats like fruit cobbler, s'mores cookies, angel food cake and bright, zesty lemon bars. Along the way, they'll learn essential techniques for working with summer fruits, light batters and gooey mix-ins. Students will learn essential techniques, build confidence in the kitchen and bring home their freshly made creations each day of camp. Ages 10-15.

The Art of Tarts and Torts Youth Camp
Tarts and Torts dives into the delicious world of creating European-inspired desserts with a variety of different crusts and fillings. From delicate flaky shells filled with creamy custard or silky chocolate mousse to rich, dense torts assembled with layers of delights, Torts and Tarts introduces campers to the foundations of professional pastry. Students will learn essential techniques, build confidence in the kitchen and bring home their freshly made creations each day of camp. Ages 10-15.

Unlock the secret to restaurant-quality cooking by mastering one of the most versatile techniques in the kitchen, the pan sauce. In this hands-on class, you'll learn how to transform flavorful pan drippings into two classic sauces using fresh ingredients and simple techniques that can be adapted to countless meals. You'll prepare and pair your sauces with your choice of chicken or pork, seasonal vegetables such as broccoli, asparagus or carrots and a hearty side of roasted potatoes or rice to create a complete, delicious dinner.

You'll learn the fundamentals of mixing, kneading, proofing, shaping and baking, along with decorative braiding and finishing techniques that make homemade breads both delicious and impressive.

Bread's most vital ingredient - yeast - is used every day as students learn to make different braided breads such as challah bread, cardamom bread and sweet rolls. Dive into the wonderful world of bread with this hands-on camp that emphasizes learning in a fun and active environment. Recipe book to take home included.
