Sessions in Prineville

Pilates exercises are performed on the floor using a yoga mat to support your body and movement. This class focuses on building core strength, improving balance, coordination, muscle tone and flexibility. Designed for beginners, the class also offers adaptations and progressions for intermediate and advanced students, ensuring everyone is challenged at their own level. Yoga mat is required, and will be provided for students who do not have one.

This course introduces the many forms and purposes of creative nonfiction such as science or nature writing, travel writing, memoir, biography and journalistic essay. Requires individual and collaborative workshop activities to develop skills in drafting and revision. Examines topics, purposes for writing and elements of craft, including voice, scene, description and structure. Requires creation of a portfolio of works reflecting various stages of their writing process. This is a non-credit Community Education course, taken with credit students. You will not receive college credit.

This course examines representative texts from the Romantic period through Contemporary literature. The romance of nature, industrial growth, urban experience, the rise of new class identities and alienation of the individual are themes in this period. Literary forms such as lyric and narrative poetry, short stories, the novel and the drama of social realism and literature of the absurd are studied. Explores relations between texts and their cultural and historical contexts. Need not be taken in sequence. This is a non-credit Community Education class taken with credit students. You will not receive college credit.

In this hands-on class, you'll practice the art of building flavor through sauté, then apply it to three comforting classics: chicken tortilla, potato leek and chicken and rice. Along the way, you'll gain practical tips for knife skills, layering aromatics and adjusting seasoning to make soups that taste like they simmered all day.

Enjoy camaraderie, cooking and culinary adventure in this class. We'll work in teams to create a Mediterranean sampler and share appetizers, an entrée and dessert with regional wine pairings. On the menu: Hummus and veggies; Prosciutto-wrapped dates; Cod in saffron broth with chorizo and potatoes; Lemon-anise biscotti; Regional wines. Mapmaking With Watercolor Youth Camp
Create your own adventure map of Central Oregon! Using beginner-friendly watercolor techniques, students will learn how to layer color and design map elements while learning to highlight trails, mountains, rivers, and favorite outdoor spots. Campers will explore creativity, practice observation skills and build confidence using watercolor and sketching tools. Each student will take home their original and framed illustrated map at the end of camp. Ages 10-15.

Italian Dinners Youth Camp
Mangia, mangia! The Italian Dinners youth camps takes the mystery out of homemade pasta and puts the f-u-n into making your own pizza from scratch. In addition to having fun, this camp aims to empower students in the kitchen with the confidence to be able to make their own meals from start to finish. At the end of camp, students will be saying, "put your feet up, I'm cooking tonight!" Taught by Brian Kerr, Director of the cascade Culinary Institute at COCC. Recipe book to take home included. Sewing: Fashion Exploration Youth Camp
Join a fashion workshop this summer for 4 days of fashion exploration! Students will learn how to use a sewing machine and serger, learn about personal style, fashion silhouettes, illustration, textiles and pattern drafting with draping on a mannequin. Students can experiment with many different techniques and tools, or focus on creating their own original design. Each student will work in their own sketchbook that they will take home at the end of camp to continue developing as a portfolio. This fashion workshop provides all the equipment and supplies, and respects each unique student's learning preferences. Ages 10-15.

Campers will learn how to combine colors, build depth and arrange shapes to create a scene that feels vibrant and full of life. With hands-on guidance and room for personal style, every student will assemble a framed collage to take home. Ages 10-15.
